What better way to end a cold winter day than with this creamy spicy butter-chickpea curry?! February calls for something a little spicy, and this curry is full of warming spices, creamy hints of coconut, and delicious chickpeas to get you through the day. We love a good curry around here, and this recipe just hits the spot! Enjoy over fresh and fluffy rice and you’ve got yourself a healthy, hearty dinner for the whole family. Let’s dig in!

Ingredients:
- 1 large white onion, minced
- 2 cloves of garlic, minced
- 1 tbsp olive oil
- 1 x 400g tin tomatoes
- 2 x 240g tin chickpeas
- 1 x 400g tin coconut milk
- 2 tbsp garam masala
- 1 tbsp ground cumin
- 2 tsp ground turmeric
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
- Rice, as needed

Method:
- In a large saucepan, heat the olive oil over a medium-high heat. Add in the onions and sauté for 5 minutes until soft and golden. Add in the garlic and sauté for another 2 minutes.
- Drain the chickpeas and add them to the saucepan along with the tinned tomatoes and tinned coconut milk. Stir everything together until it is well combined.
- Add in the spices and seasoning, salt and pepper to taste, and stir until everything is well combined. Reduce the heat to a simmer and leave to cook for 20 minutes.
- Serve over freshly cooked rice and garnish with a sprig of parsley and enjoy!
This curry can be stored in an airtight container in the fridge once completely cooled. Consume within 2 days.
